We're Back!

So excited to get back to bootcamp tomorrow! I've missed all of you and our outdoor workouts. It looks like it's going to be a great week, too, as far as the weather goes.
Locations:
M and F bootcamps at Rancho Grande Park
W: PISMO BEACH! Stair workout!
6am class will meet at 545 at the end of Wilmar Street.
915 class will meet at the end of Wadsworth at our normal time.
Bring only a towel and water.

Stride Class:
Tuesday: Pismo Beach, meet at the pier
Thursday: Rancho Grande Park

Recipe: Roasted Cauliflower with Olive Vinaigrette

Yum!
Got this recipe out of Nov 11 Health magazine and made it the other night for dinner.
Prep: 20 minutes
Cook: 30 minutes
Makes: 6 servings

3 lbs cauliflower, cut into 3/4" slices
4 TB olive oil, divided
1/2 tsp freshly ground pepper, divided
1 garlic clove
1/3 cup brine-cured pitted olives, finely chopped
1 tsp finely grated lemon zest
1 TB fresh lemon juice
1. Preheat oven to 450 degrees with racks in upper and lower thirds. Line 2 large baking pans with foil.
2. Arrange cauliflower on baking pans and drizzle w/2 TB oil, salt, and 1/4 tsp pepper. Roast, switcing position of pans after 15 minutes, until golden in spots and just tender (30 minutes total)
4. While cauliflower roasts, mince and mash garlic to a paste and place in a small bowl; whisk in remaining 2 TB oil, olives, lemon zest and juice, and remaining 1/4 tsp pepper. Arrange cauliflower on a platter and drizzle with vinaigrettte.
Serving size: 3/4 cup

Fat 10.3 gr (sat 1.5 g, mono 7.1 gr, poly 1 g)

Locations for the week of November 7-11

Hope you all were able to enjoy an extra hour of sleep today and the beatiful crisp Autumn day this Sunday turned out to be! I know I did. For all of us 6am'rs, we get to enjoy a brighter morning for a few weeks to come, too. Yay! Should make it easier for us to get up and at it, right?

This is week 4 of this October session. But, remember, we are rolling right in to the next session with a week break the week of Thanksgiving.

Here are the locations for Week 4:
M and Friday: Rancho Grande Park
W: Pismo Beach Dunes! We will meet at the Monarch Butterfly entrance of Hwy 1. Need directions? Email me! 6am class will meet at 545am on Wednesday!

Stride, Strength, Stretch:
Tu/Th at Rancho Grande Park
Thursday will be an earlier start time: 545am or if there are no objections, maybe 530am? I will be teaching this class and I have another commitment at 645 at Kennedy. So, if you girls are game, I'd like to meet at 530. Let Danielle know on Tuesday, please. You can vote and I will go either way.

Week 3 Focus: eliminate the "white": white flour, white sugar, white rice to name a few. White foods are typically stripped of their nutritional value; therefore do nothing for you except add unnecessary calories.
